One of my favorite things to do is to take a traditionally unhealthy food and make a healthy version. Even the pickiest of eaters will find that healthy CAN taste just as good. In fact, I personally find that it tastes a whole lot better.
Cue the sea salt cashew caramels… It really doesn’t get much better than these. I think you will be amazed at how great they taste, but also how simple they are to make.
Sea Salt Cashew “Caramels”
Ingredients:
10 dates (pitted)
1/2 cup creamy, salted cashew butter
2 tablespoons of coconut oil
1 tsp vanilla extract
Sea salt flakes to top
Directions:
1. Combine the dates, cashew butter, coconut oil and vanilla in a food processor. Process until smooth.
2. Line a small container or pan with parchment paper. I used a 4 x 8 dish.
3. Place mixture into dish, pressing firmly down and smoothing over the top.
4. Sprinkle sea salt over the top.
5. Place in freezer for about an hour. When ready, take out and slice into squares. We keep store ours in the fridge for up to a week in a sealed container.
